NUTRITIONAL AND MEDICAL VALUES OF SPICES AND OTHER INGREDIENCIES

ASAFOETIDA

It aids enormously in digestion. It is pungent, resinous gum used and held in great asteem amongst indigenous medicines from earliest times in India. It expels wind from the stomach and it is a sedative. It is used as an antibiotic and treats bronchitis.

BARLEY

A healthier high-fiber, high protein whole grain, barley has numerous health benefits. It reduces the risk of heart diseases and lowers cholesterol. As barley is extremely low in calories, it acts as a wonderful diet supplement and helps to maintain a slim stature.

BLACK PEPPER

It is pungent and offers warmth to any curry. Black pepper is one of the oldest and most important of all spices. It is a stimulant, aromatic, digestive and nervine tonic. It has a stimulating effect on the digestive organ and is a good home remedy for digestive disorders.

CHICKPEAS

It is very high in proteins and a good source of zinc and folate. It is one of the key ingredients of a cuisine in India and a healthy addition to any diet. Chickpeas is naturally low in fat, high in dietary fiber and rich in minerals and vitamins. 

CINNAMON

One of the oldest spices, cinnamon is used in medicine and in cooking. It makes the food tastier with its extraordinary smell. It helps to lower cholesterol and can regulate the effect on blood sugar. It helps in arthritis pain as it is a high source of manganese, fiber, iron, and calcium.

CLOVE

Used for centuries for its medicinal value and as a nutritional spice for food, clove is high in many minerals. It is analgesic and has anti-inflammatory and anti-bacterial effects with a distinct aromatic smell. It is very good for toothaches. Its antiseptic properties help to reduce infections.

CORIANDER SEEDS

They possess ample nutritional as well as medicinal properties and are one of the most commonly used seeds. They are used for many medicinal purposes.th seeds can be soaked in water, strained and then used for washing the eyes. It cools the eyes and remove fatigue. 

CUMIN SEEDS

Cumin has been used since ancient times as a spice with a distinctive flavor and aroma. It is useful in digestive disorders. In ayurveda, cumin seed water is given after intake of meals, which enhances digestion and is antiseptic.

CURD

It is sour in taste and it is used to treat diarrhea and dysentery. It causes heaviness when used in excess and can lead to constipation. It accelerates digestion and acts as an appetizer. It has a great nutritious value and it is rich in calcium, protein, riboflavin and vitamins. 

DRY RED CHILLI

It contains vitamin C and carotene in high amounts. It has many health benefits and it is good for stimulating appetite and for boosting blood circulation. A small amount of red chilli is recommended in the diet to boost the immune system.

FENUGREEK

A bitter, pungent, sweet and warming, fenugreek is a good rejuvenator and it is also very efficient in diabetes. The regular use of fenugreek helps to keep the body clean and healthy. It can lower cholesterol levels and improve digestion. It is very good for skin problems. It is packed with vitamins A, B, C and E. It also has anti-aging properties. 

GARLIC

This has been medicinally used for various diseases and it is one of the most valuable ingredients added in various dishes. It is very good for heart patients as it reduces the risk of cancer and helps in weight loss. Two drops of garlic oil help to cure earaches.

GHEE

Ghee is clarified butter and it is commonly used in Indian cooking. It is the main ingredient in some of the ayurvedic medicines. It is also used for various treatments when combined with a variety of herbs, especially in cases of ulcers and constipation. 

GINGER

Hot and pungent, ginger is stimulating both digestion and circulation. It is excellent for cold and cough. As the case with most spices, ginger also has aphrodisiac properties. It is widely used as a local medicine and is high in vitamin C.

GREEN CHILLI

It has disease preventing and health promoting properties. Green chilli is a staple food of Indian cuisine. Rich in vitamin C, vitamin A and flavonoids, green chilli also contains minerals like potassium, manganese, iron and magnesium.

GREEN GRAM, SPROUTED

Sprouted green gram is one of the most nutritious gram and promotes well-being.  its nutritional value increases when sprouted}. Its soup speeds recovery from acute diseases. It acts as the best anti-bacterial soap. It removes the dirt from the skin without causing any irritation. 

FENNEL

It cools and sweetens the curry. Fennel is often used as a mouth freshener or as a digestive aid after meals. It is appetizing,  stimulating, a good laxative and it has aphrodisiac properties. 

JAGGERY

This is obtained from plant and does not involve any chemicals. It is known to have many medicinal properties and health benefits. It also treats problems such as dry cough, common cold and asthma. It is very rich in iron. 

MUSTARD SEEDS

It is a warm-giving herb with a pungent taste and it is mildly diuretic. These seeds have not only been used as a spice but also in medicines since ancient times. The seeds are high in essential oil and in calories. The oil has traditionally been used to relieve muscle pain, rheumatic and arthritic pains.

NAVARA RICE

This rice has antioxidant properties and it is rich in iron, minerals and zinc. It is good for respitatory, circulatory and digestive systems. It is an anti-cancer agent, particularly effective against breast cancer. 

NUTMEG

It is used as a preventive and healing medicine. It has strong anti-bacterial properties. Nutmeg is effective in killing a number of cavity-causing batceria in the mouth. It is used as a medicine to improve memory. It reduces flatulence, aids digestion and improves appetite. 

OATS

High source of vitamins, oats has a good balance of essential fatty acids, which are lined with longevity and general good health. It also helps to reduce the risk of cancer.

PEANUT

This nut is enriched with noteworthy health benefiting nutrients. Rich in energy, peanut contains minerals, antioxidants and vitamins. This nut is an excellent source of vitamin E. 

PRUNUS CERASOIDES (Himalayan wild cherries, pathumukham)

It pacifies the burning sensation in the body and it has many health benefits. It also has antioxidant properties.

RAGI

A wonder grain with numerous health benefits. It is rich in calcium, proteins and minerals. It is a good source of fiber and it is very suitable for people trying to loose weight. 

ROCK SALT

This salt has many benefits; besides being used in cooking it is used for its medicinal value as well as for beauty treatments. Regular use of this salt in cooking can control all health problems. It can also be used as a body scrub and teeth whitener. 

SAGO 

Sago is a common ingredient used in Indian recipes. It provides a lot of energy and it is very low in calories. It is a good substitute for rice. It is also good for weight reduction. 

TAMARIND

This is used in ayurvedic medicine and as a mild laxative. As it is acidic it excites the bile and other juices in the body. It is also used as a blood purifier. It is sweet and tangy in taste. Its pulp is made into a liquid and administered to alleviate alcoholic intoxication. 

TRIBULUS TERRESTIS (Land caltrops, Nerinjil}

This is one of the most common herb for healing used in Ayurveda. It can treat various urinary problems and urinary stones, eye problems, pre-mensrual syndrome and high blood pressure. 

TULSI

This herb has many remedies for a lot of common ailments. The leaves are a nerve tonic and also sharpen the memory. Tulsi is very good for cough and cold. Its juice mixed with honey helps to expel kidney stones. It relieves stress and increases immunity, and it has rejuvenating properties. 

TURMERIC

One of the most fundamental spices that is often used in ayurvedic cooking but practically in all Indian cooking. Turmeric is pungent, bitter and slightly astringent. It is an excellent blood purifier and anti-inflammatory. Its bright color gives curries their characteristic hue. It is a very useful antiseptic, which helps in the intestinal lining disorders. 

WHITE DAL

This is known as an urad dal. It is rich in vitamins, minerals and dietary fiber. It contains plenty of potassium and helps in reducing high blood pressure.
