SERVES 2-3 PERSONS

INGREDIENTS
  • 1 / 400 g cabbage (bandh gobhi), halved and cut into long, fine shreds, washed and drained
  • 1 onion, chopped lengthwise into fine shreds
  • 1 green chilli, chopped
  • ½ tsp / 2 ½ g cumin (jeera) seeds
  • 2 tbsp / 30g coconut (nariyal), grated
  • ¼ tsp turmeric (haldi) powder
  • Salt to taste
  • 1 ½ tsp / 7 ½ ml vegetable oil
  • 1 tsp / 5 g mustard seeds (rai)
  • 1 dry red chilli (sookhi lai lirch), halved, seeds removed
  • 10 curry leaves (kadhi patta), fresh
METHOD

Mix the cabbage with onion, green chilli, cumin seeds, coconut, turmeric powder and salt. Leave it for about 10-15 minutes. Heat the oil in a saucepan and add mustard seeds. When it splutters, add the dry red chilli and curry leaves. Stir till the chilli turns into a darker shade. Add the cabbage mixture and stir well. Lower the heat and cook covered. Stir once in a while and cook until the cabbage is barely limp. Transfer into a dish and serve hot.

CABBAGE
It is an excellent source of vitamin C, which is one of the best antioxidants and helps in reducing the aging process. It is also good for constipation. It helps in stomach ulcers, excess weight, skin disorders, eczema, rheumatism, arthritis, gout and eye disorders and in proper functioning of the nervous system.

ONION
Its nutritional value has been evident for many generations and is being used for thousands of years. It is used as a diuretic, for digestion, for the heart, eyes and joints. It is low in fat, calories and is cholesterol free. Onion extract is very good for prevention of arthritis, cough and cold, asthma and bronchitis.

GREEN CHILLI
It has disease preventing and health promoting properties. Green chilli is a staple food of Indian cuisine. Rich in vitamin C, vitamin A and flavonoids, green chilli also contains minerals like potassium, manganese, iron and magnesium.

TURMERIC
One of the most fundamental spices that is often used in ayurvedic cooking but practically in all Indian cooking. Turmeric is pungent, bitter and slightly astringent. It is an excellent blood purifier and anti-inflammatory. Its bright color gives curries their characteristic hue. It is a very useful antiseptic, which helps in the intestinal lining disorders. 

CUMIN SEEDS
Cumin has been used since ancient times as a spice with a distinctive flavor and aroma. It is useful in digestive disorders. In ayurveda, cumin seed water is given after intake of meals, which enhances digestion and is antiseptic.

COCONUT
This fruit has many benefits with amazing medicinal properties. Coconut water is a natural drink for hydration and it is high in energy. Its edible flesh is a part of the daily diet of people in Kerala and it is used in most of the dishes. It is rich in fibre, minerals and vitamins and has more than 90% saturated fats.

MUSTARD SEEDS
It is a warm-giving herb with a pungent taste and it is mildly diuretic. These seeds have not only been used as a spice but also in medicines since ancient times. The seeds are high in essential oil and in calories. The oil has traditionally been used to relieve muscle pain, rheumatic and arthritic pains.

DRY RED CHILLI
It contains vitamin C and carotene in high amounts. It has many health benefits and it is good for stimulating appetite and for boosting blood circulation. A small amount of red chilli is recommended in the diet to boost the immune system.

CURRY LEAVES
An aromatic herb, curry leaves are a unique flavouring agent. The leaves’ benefits are not just for its taste, but it is also used as a natural remedy, for many health conditions and disorders. It is believed that eating few fresh curry leaves daily manages diabetes, reduces cholesterol, aids weight loss and prevents development of cataract.
