Our diets are tailor made to each individual programme at SwaSwara. Those on the Swa Wellbeing is served a healthy diet of vegetarian and seafood and also wine is offered as a part of this programme. Those on the 7 and 14 nights Rejuvenation and Detox & Panchakarma programmes would follow the Sattvic diet where the doctor would prescribe a personalised diet for each individual based on their Doshas.

Our kitchen is also pharmacy. For every person we are preparing diet, which is prescribed by our doctor, who is cooperating with the kitchen on daily base. Each person is treated differently. The diet depend on one’s health problems and dosha prakriti.  

The recipes are simple. They are focusing on usage of spices and ingrediencies such as garlics, ginger, turmeric or some cumin seeds. Also the quantity and type of an oil must be considered. These are the most important elements, which improve immunity and digestion. Knowing what, when and how much quantity should be added into each dish is a secret of ayurvedic diet. 

The diet must be holistic. One can not separate one from the other, you can not say one food is good for the body, one food is good for the mind and one good for the soul, it is always a union of all three. The minute you see food and say, "Oh, wow. It's so good." That's the food that your body requires. The food should look really appealing, should smell very good and looks tasty. Only after your appetite starts increasing as you eat. That's the food that would feed the body, mind and soul.

The food in our restaurant is a medicine actually. Ayurveda says, we are getting the most of the diseases because of our food habits. It is very important how you prepare the food, what kind of ingredients you are using, from where come vegetables and fruits, who cook the food, how and etc. 

All depends on client’s diet plan. Buffet is divided according the doshas into three categories - vata, pita, and kapha.After the consultation with doctor, clients get diet plan. For some serious cases or also for slimming programme patients, we cook separately or they can take some food from buffet after the consultation with Dietologist.We have dietologist. Every day she consults diet plan with chef and his team. Sometimes the diet plan can be changed from one day to another, if health condition of the patient has changed. But mostly, she is there, to avoid confusions, because not all the people are familiar with ayurveda principals and local dishes. Although we try to serve vegetables and fruits, which are available also abroad, it helps foreigners to adjust to ayurveda diet.

After the first consultation, patients get an ayurveda diet plan, which depends on their health conditions and treatment programme. For some serious cases or also for slimming programme patients, the food is cooked separately, the other patients can take food from ayurveda buffet served in the main restaurant. The pure vegetarian diet is based on local recipes prepared from organic vegetables and fruits. Between the main meals fruit juices and ayurvedic herbal water are served.

After the arrival to Kalari Rasayana, patients have consultation with senior ayurveda doctor, who diagnose the main problems and causes of the disease and I conduct the diet consultation. Only after both consultations we get an idea, how the disease is connected with their food habits and if there is a reason to change the lifestyle patterns. It is important mainly for patients treated for metabolic diseases, which are originating in wrong eating habits.

Within 14 or 21 days, during which they are staying with us, we are making some changes in their existing diet based on their digestive capacity, which is different for every person. Accordingly, we plan an ayurveda diet and serving them medicated dishes. The medicine can be ginger or gourd or some special root vegetable and etc. It is different for each person and once we find the right one, we include it in daily diet. But the most of the vegetables available in India is not commonly available abroad, so we try to take it into the consideration and adjust it. 

Before they leave Kalari Rasayana, we prepare a diet plan for them considering all the food patterns rearrangements, but also practical aspects for their daily life. We are educating them: Please, avoid that or take that in a separate time.
