Let us invite you to cook with our chef Rajesh Sishupalan. Today we cook the Pumpkin Soup, which helps to support your mental, physical and emotional wellbeing. The bright orange color is a sign that pumpkin is loaded with an important antioxidant, beta-carotene. It may reduce the risk of developing certain types of cancer and offers protection against heart disease. In Ayurveda, it pacifies Vata and Pitta Dosha. It is also known as Basti shodhak because of its property of cleansing the bladder. It is known to increase sperm count and virility. Recent research shows that pumpkin is highly beneficial for people with diabetes.

The earth element predominates pumpkin, making it a heavy, grounding and nutritive ingredient. This earthy quality gives pumpkin its natural relaxant effect and makes it a comforting option in times of stress. Pumpkin contains an abundance of disease-fighting nutrients, including potassium, pantothenic acid, magnesium, and vitamins C and E.

INGREDIENCES FOR 1 PORTION
  • 1 small pumpkin 
  • 2 garlic cloves
  • 2 small ginger, crushed into the pieces
  • ¼ tea spoon black pepper, crushed
  • 1 table spoon/15 ml oil
  • 2 tea cups of water
  • salt to taste
  • lemon juice to taste
METHOD
  • Cut a pumpkin into small pieces.
  • Prepare a garlic-ginger paste. (Chopped them to small pieces. Crushed them together in the mortar until the past is smooth.)
  • Heat the oil in a saucepan. Add garlic-ginger paste and fry till it is slightly golden brown. 
  • Add pieces of pumpkin and pour 2 tea cups of water and cook it for 10 minutes.
  • Pour it into the blender and mix it until the mixture looks smooth.
  • Pass the soup through a strainer into the bowl and pour it back into the saucepan to boil it for few minutes. 
  • Add salt, pepper and lemon juice.  
  • Serve hot, seasoned with pumpkin seeds.
