Let us invite you to cook with our chef Rajesh Sishupalan. Today we cook Pumpkin Masala. The bright orange color is a sign that pumpkin is loaded with an important antioxidant, beta-carotene. It may reduce the risk of developing certain types of cancer and offers protection against heart disease. In Ayurveda, it pacifies Vata and Pitta Dosha. It is also known as Basti shodhak because of its property of cleansing the bladder. It is known to increase sperm count and virility. Recent research shows that pumpkin is highly beneficial for people with diabetes.

The earth element predominates pumpkin, making it a heavy, grounding and nutritive ingredient. This earthy quality gives pumpkin its natural relaxant effect and makes it a comforting option in times of stress. Pumpkin contains an abundance of disease-fighting nutrients, including potassium, pantothenic acid, magnesium, and vitamins C and E.

INGREDIENCES FOR 1 PORTION
  • ¼ of ripe pumpkin

  • 1 big onion

  • 1 lemon

  • ¼ tea spoon cumin seeds

  • ¼ tea spoon black pepper, crushed

  • fresh coriander leaves 
  • 1 tea spoon honey

  • salt to taste

  • 1 table spoon/15 ml oil

METHOD
  • Clean the pumpkin and cut it into the slices. 
  • Boil the pumpkin in the pot for 5 minutes. 
  • Chop the onion into the small pieces. 
  • Heat the oil in a soucepan.
  • Add cumin seeds and fry them lightly.
  • Add onion and fry it until translucent and fragrant.
  • Add cut and precooked pumpkin, bring it to a simmer and add drops of lemon mixed with honey. 
  • Add crushed black pepper and salt. 
  • Serve it with your favourite rice or chappati.
